Open-Faced Sandwich with Ricotta, Arugula and Fried Egg

I don’t think I’m confident enough in the kitchen yet to create my own recipes. I generally always look at one, and will tweak it or guesstimate, but I very rarely come up with my own. And right now? I”m okay with that. I love food for  its mix of culinary,visual and social aspects.

In the case of today’s lunch? I like the contrast of the white, yellow and green. I like how the delicious country bread smeared with the ricotta mixture is the perfect density for sopping up the oozing egg yolk. And I think what I like best of all is how my family eats so many of our meals together, talking and laughing and enjoying our food.
